I considered using EVERGREEN Matcha because I wanted to commercialize matcha honey syrup that does not have coloring agents in it.
By using EVERGREEN Matcha, we were able to solve the color fading problems occurring from high heat in the manufacturing process.
Also, we were able to achieve our objective to set the expiration date to more than 12 months.
I used an antioxidant because I was concerned about the oxidative discoloration peculiar to tea, and finally I was able to set the expiration date to 24 months without using a coloring agent.
Matcha paste is used because it has good dispersibility and is easy to use.
