About processing

What kind of processing are you doing?

EVERGREEN Matcha Paste

A paste-like product produced by mixing Matcha with water using our unique manufacturing technology. (※)

(※) What is the unique manufacturing technology ?
Color fading of matcha occurs when “chlorophyll ” contained in matcha loses its original green color by the influence of heat, light, and acid.
Our green stabilization technology applied to the chlorophyll prevents color fading.

EVERGREEN Matcha Powder
This matcha powder is made by spray-drying the water contained in the matcha paste.

EVERGREEN Green Tea Extract
This is a liquid extracted from Tencha green tea leaves by applying our green stabilization technology.

About use

What kind of product can it be used for ?

It can be used for general food processing such as confectionery and breadmaking, and also, for beverages, alcohol products, and retort foods, etc.
Especially, it is suitable for the following products:

  • The products that want to be composed of raw materials with no coloring agents.
  • The products that require heat for sterilization during processing.
  • The products that you want to be transparently packaged.
  • The products in acidic region with low pH value.

Please tell me the heat resistance record.

We have track records of heat resistance to retort sterilized products at 121℃
 for 20 minutes and at 95℃ for 40 minutes.

Please tell me the light resistance record.

We have a track record of light resistance to products packaged in transparent materials at the illuminance of 1500 to 2000 lux.
1500-2000 lux is the illuminance inside of the showcase.

 

Please tell us the test results in the acid resistance range.

We have a track record of acid resistance to sparkling beverages with a pH value of about 3.5.

Is there anything I should be careful about when using it ?

Although it can be expected to be effective in preventing green color fading, catechins contained in tea tend to be oxidized easily.
There is a concern that it may become a blackish green or a reddish brownish green due to the discoloration symptom by oxidation.
We recommend that you take antioxidant measures as necessary.

Are there any weaknesses ?

Foods whose doughs become alkaline after the ingredients are mixed before heating may have color fading or color change problems.

Even when I use EVERGREEN Matcha, the color of it fades.
Is there any solution ?

EVERGREEN Matcha is more effective in preventing color fading than regular type matcha or matcha with chlorella. However, because it is a food ingredient, it does not mean that it will not color-fade at all .
For example, discoloration or color fading symptoms of EVERGREEN Matcha can be seen in an environment that it is exposed to strong light or sunlight for a long time, or in an environment when high heat is applied to it for a long time, such as at 80°C for four hours or at 120°C for one hour.
In addition, the color may change depending on the combination with it and the mixed raw materials.
Many causes are thought to be due to oxidation, and when the water activity of the food is high, catechins, which are the active ingredients of tea, turn reddish brown.
If the element that induces oxidation is high, such discoloration symptoms will be seen, so it is recommended to use an antioxidant in combination.

About copper

What is the amount of copper in Matcha paste, Matcha powder and Green tea extract ?

It is measured for each production lot.

Is it different from copper chlorophyll or sodium copper chlorophyllin ?

Yes, it is different.
The decisive difference is the raw materials and manufacturing method.

 

About trace management

Do you use agrichemicals to grow tea leaves ?

Yes, we are using them.
We confirm the agrichemicals used and the sprayed amounts of them from the cultivation history.
In addition, we carry out residue analysis of agrichemicals three times a year to confirm that all the amounts of them are below the national standard values.

What are the agrichemical standards ?

We measure, analyze and confirm that the respective amounts of residual agrichemicals are all below the positive list standard values for tea in every tea season.

What about trace management ?

We keep records in all processes and manage lots.
By using the lot number information, we can go back to the tea-leaf producers anytime.

Are all products from Nishio City ?

In addition to the regional brand “Nishio Matcha”, we also have a lineup of matcha and green tea from other regions.

About storing method

Is there any proper storage method ?

Store at room temperature (25℃ or less) away from direct sunlight.
(* Some products should be stored in a cool and dark place)
After opening the matcha powder, remove the air from inside of the bag sufficiently, fasten the bag chuck part firmly, pay attention to moisture and fragrance and store it away from direct sunlight.
